Ulas Peksun, Chef de Cuisine
Life imitated art with Chef Ulas Peksun. He was just a teen living in his native country, Turkey, when he first saw the film Le Chef. The movie ignited a passion in him that drove him to pursue a culinary career. His love of learning new cuisines took him to Florence, where he spent two months studying Italian cuisine at Scuola Toscana. Chefs Massimo Bottura and René Redzepi further inspired his culinary development. He then headed to the U.S. for a J-1 exchange program. One busy night serving around 250 guests made him realize he was in the right business. Chef Ulas joined the Rosen team in 2022. Early into his Rosen tenure, he cooked for Feeding Ukraine, a fundraiser for Chef José Andrés’ World Central Kitchen. It was a culinary experience he describes as “emotional and meaningful.” And if you ask Chef Ulas what makes dining at Rosen Shingle Creek memorable, he’ll say it’s working with the local farms that provide fresh ingredients. You can experience that freshness in each of his dishes, which highlight local ingredients to create memorable meals for guests.
