Easter Extravagance is on the Menu in 2025

At our resort, we absolutely love hosting. Whether it’s a conference for thousands of people or a romantic getaway for couples, we pull out the red carpet for our guests every chance we get.

When it comes to events and holidays at Rosen Shingle Creek, extravagance is always on the menu.

This year’s Easter celebration at Café Osceola is no exception.

Here’s a peek at our beautiful 2025 Easter brunch at Rosen Shingle Creek.

Begin with Fresh Appetizers and Small Plates

With starters and salads this good, you’ll have to be mindful not to fill up before you even find the entrées.

Awaken your taste buds with amuse bouches like smoked salmon on a house baked pretzel roll with caper cream cheese, or a yellowfin tuna taco with avocado and crispy rice paper.

Then move onto an array of salads like our Mediterranean couscous salad or the shaved Brussel sprout salad with sliced almonds and a Champagne vinaigrette.

Fill your plate with an array of local and imported cheeses served with an assortment of jams and local honeycomb, as well as antipasto including cured meats and marinated grilled vegetables.

The bruschetta bar allows you to create your own culinary masterpiece with additions like spring bean hummus, pickled local mushrooms, whipped ricotta, stracciatella, basil pesto, and tapenade.

A Seafood Lover’s Paradise

The seafood station at our Easter buffet overflows with fresh fish and shellfish.

Enjoy chilled gulf white shrimp and gulf oysters, along with a bay scallop ceviche, smoked mahi dip, and a spicy hot sauce bar.

If you prefer your seafood in a sushi roll, our Banrai sushi and dim sum display will make your mouth water.

Treat yourself to a variety of sashimi and nigiri, as well as Rainbow Rolls, Dancing Eel rolls, spicy tuna, and our signature Rosen Roll.

Elegant Entrées

When you’re at last ready for the main course, you can help yourself to a variety of incredible entrées.

Our Garden Rosemary Leg of Lamb is an Easter classic, served with roasted root vegetables, toasted orzo, and wild rice pilaf.

Equally delicious is our seared snapper with golden cauliflower puree and a unique yuzu butter, and our short ribs served with goat cheese polenta, garden gremolata, and roasted shishito peppers.

Help yourself to our Low Country Shrimp Boil, served with marble potatoes, corn, andouille sausage, and garlic butter.

Don’t forget to stop by the carving station, where you’ll find garden herb crusted prime rib with horseradish cream and a bourbon glazed pit ham with fluffy buttermilk biscuits.

Bountiful Breakfast Food

Brunch just isn’t brunch without pancakes.

Luckily, you can find freshly griddled buttermilk pancakes and maple syrup waiting for you at our Easter buffet.

One of our talented chefs will be making custom omelets at the omelet tation so you can create your perfect concoction.

Cheshire bacon and smoked sausage round out a beautiful selection of breakfast food.

Leave Room for Dessert

At Rosen Shingle Creek, we pull out all the stops when it comes to dessert.

This year, we’re excited to treat our guests to an incredible assortment of breakfast pastries, including Danishes, croissants, muffins, scones, bagels, and a variety of flavored butters.

Finish (or start) your meal with mini desserts like carrot cake cheesecake, mango coconut cream puffs, key lime tarts, passionfruit macarons, strawberry cream cheese bundt cake, chocolate fudge cupcakes, and over a dozen others.

Kids and grownups alike will love our ice cream bar, where we serve a selection of local ice cream with toppings like mini marshmallows, strawberry popping pearls, fresh fruit, and more.

When you enjoy Easter brunch at Rosen Shingle Creek, you can toast to a beautiful holiday spent with loved ones with unlimited Champagne and mimosas (for guests 21 and older.).

You can also take advantage of complimentary self-parking and discounted $15 valet parking for the event.

This year, Easter brunch guests will also have the opportunity to meet the Easter bunny for a memorable moment – and a great photo op.

Pricing for 2025 is $99.95 for adults, $44.95 for children ages 4 – 11, and children 3 and under dine for free with each paying adult. Sales tax and a taxable service charge are not included in pricing.
